Light+shadows & the kitchen
The progression of light streaming in from early dawn to noon in my kitchen. At noon, I made shrimp curry for lunch based on this recipe but changed a few ingredients. It tasted pretty amazing considering how easy and quick it was to make!
I’m gonna type out my version in the comments so check there if you want to give this curry a try.






Serves 2

250g of uncooked shrimp, peeled and deveined (you can add more if you want a lot of shrimp of cos)
1 medium sized onion (chopped)
2 tablespoons of curry powder
3/4 cup of coconut milk
3/4 cup of chicken stock
2 tablespoons of sunflower oil
2 hard boiled eggs
steamed white rice
salt & pepper
(for the toppings)
1/2 stalk of spring onion (finely chopped)
small handful of chopped peanuts
small handful of raisins
1/4 of a red bell pepper (finely chopped)

1) Season the shrimp with salt and pepper. Add 2 tablespoons of oil to your pan. Add shrimp to the pan and half cook them. Take them out of the pan.
2) Add in the onions and cook till you smell the aroma. Put in the 2 tablespoons of curry powder and stir it together with the onions till you smell the aroma of the curry powder come alive.
3) Add in the coconut milk and chicken stock, season to taste with some salt. Stir everything well and put the lid on and bring it to a boil. Bring down the flame once it starts to boil and let it simmer till the sauce thickens. Keep stirring!
4) Once the sauce appears thick enough, put the shrimp back in and the hardboiled eggs. I chose to use hardboiled eggs instead of potato because potato and shrimp didn’t quite go, to me.
5) Once the shrimp is fully cooked, it’s done and ready to be eaten. Spoon the curry on your rice and throw on all the toppings. I highly recommend you have the toppings cos I find they made the whole dish a lot(x10) better.

I knew I had to try the recipe once I saw the photo. I didn’t add the toppings and the hard boiled eggs but overall, it was still absolutely delicious.
